A night on a houseboat, and nothing to do but watch the water.
The backwaters are a working landscape: canals with ferries, villages along the bunds, rice grown below sea level in polders, and coir spun in the town. Houseboats — converted rice barges, now hundreds of them — cruise out from Alleppey each afternoon, moor for the night and come back the next morning.
Quality varies enormously. The cheapest boats have loud generators, no insect screens and no waste tanks. Choose a boat with a green certification and a waste tank; the difference in the experience and in the water is real.
The alternative, cheaper and arguably better, is the public ferry from Alleppey to Kottayam — three hours through the same landscape for the price of a coffee.

Life jackets are supposed to be on every houseboat — ask to see them. Canal water is not safe to swim in. Check that your boat has a waste-holding tank rather than discharging into the lake; the state requires it and enforcement is inconsistent.
Houseboats board around noon, cruise until about 5:30pm when they must moor by law, and return by 9am. That is the standard 22-hour package. Book through your hotel or a licensed agent rather than a jetty tout, and confirm air conditioning hours — most run it only overnight.
Villages along the canals are people's homes — keep noise down and do not photograph inside houses from the boat.
